Vegetable Pulao

Vegetable Pulao
Ingredient
  • Basmati rice - 2 cup, washed and soaked in cold water for about 15-20 minutes
  • Vegetable - 1 finely chopped carrot, 1 finely chopped potato, 1/2 finely chopped cauliflower, 1/2 cup of green peas, and 2 pieces tomatoes(washed and chopped)
  • Whole Gram Masala - 2 tea spoon(cloves – 2, moti elaichi – 2, choti elaichi – 3, cinnamon stick – 1)
  • Cumin seeds - 1 tea spoon
  • Bay leaves - 2
  • 4 cups of water
  • Ghee – 1 tea spoon
  • Cumin powder, coriander powder and chili powder - each 1/2 tea spoon
  • Salt to taste
  • Oil – 2 tea spoon
  • coriander and pudina leaves - 1/2 cup

Method
Heat the oil in a large vessel. Add the bay leaf , cumin seeds and whole gram masala and cook for 2 minutes. Add all vegetables, cumin powder, coriander powder and chili powder and cook to mix well all the ingredient. Cook until all the vegetable are half-cooked by adding little little water. Add the soaked rice and cook for five minutes, stir continuously to avoid burning. Add coriander and pudina leaves into it. Add water and salt to taste. Bring to a boil by covering the vessel . Add ghee and reduce the heat to medium. Cook until rice is done and all water is absorbed. Serve Veg Pulao hot, with yogurt or raita.
